Delicious and Healthy Chipotle Chicken and Quinoa Wraps

So Summer (and swimwear) is coming, and we’ve have decided it’s time to shed some off some of those winter pounds. However, we just flat out refuse to sacrifice delicious flavor for the sake of a beach-ready body.

We just spent all winter feasting on filling gumbos and gooey grilled cheese sandwiches.. we’re not going back, dangit!

We started out by picking up some low-calorie flavored tortillas from Whole Foods (my favorite being the sun-dried tomato & basil variety), and filling them with all the delicious things we had laying around our fridge – fresh chopped onion, lettuce, cucumber, tomato, and avocado. These veggies gave our wraps the crispy freshness that everyone loves, and adding in shredded chicken and quinoa gave us enough protein to keep us feeling full for hours.

These wraps are super flavorful and filling, leaving you energized and ready for the rest of your day. Spice it up with some taco seasoning and chipotle ranch, and you’ll have a delicious lunch to look forward to every day!

Chipotle Chicken & Quinoa Wraps

These wraps will leave you satisfied and ready for the day. Spice it up with some taco seasoning and chipotle ranch, and you'll have a delicious healthy lunch!


  • 4 tortillas
  • 1 cup shredded chicken
  • 1 cup cooked quinoa
  • 1/2 cu chopped tomato
  • 1/2 cu chopped onion
  • 1/2 cu shredded lettuce
  • 1/2 cu julienne cucumber
  • 1/2 avocado
  • Chipotle ranch dressing
  • taco seasoning
  • Himalayan sea salt and fresh ground black pepper


  1. Heat tortillas between 2 wet paper towel in microwave for 30 seconds.
  2. Add the chicken, quinoa, tomato, onion, lettuce, cucumber, and avocado evenly between the 4 tortillas.
  3. Drizzle each with chipotle ranch dressing.
  4. Add salt, pepper, and taco seasoning to taste.
