“Everything-but-the-Kitchen-Sink” Breakfast Frittata

Frittatas are a weekend ritual in our home.

This all started as I was heading down to Austin for a long weekend. I realized in the kitchen was a fridge full of leftovers, and they’d all be spoiled by the time I’d return! And of course, no one wants to come home to a fridge full of spoiled food.

This is where the greatness of our lovingly named “Everything-but-the-Kitchen-Sink” fritatta came in to save the day! It’s super delicious, healthy, and also completes a particular task… to turn all your extra veggies and leftovers into savory, omeletty, pie-like goodness.

Frittata - Ready to go in the oven!

A fluffy egg pie filled with tomato, onion, and all your other most favorite things mixed in together is hard to beat. Who would have guessed that such a hodgepodge of ingredients could come together beautifully to form the most amazing of breakfasts? I know that idea may remind you of the story line from <insert inspirational sports movie about underdogs coming together to win here>, but it’s so true!

Have an extra slice of tomato? Cut it up and throw it in! An extra half an avocado? Chop it up and add that too! Some diced onion? Yeah… I think you get the picture.

Everything But The Kitchen Sink Frittata


  • 6 eggs
  • 1 oz Parmesan
  • 1 tbsp butter
  • 1/2 cup sliced mushrooms
  • 1/2 cup cooked bacon, cut into bite sized pieces
  • 1/4 cup spinach
  • 1/2 avocado, cut into 1/2 in pieces
  • black pepper
  • salt


  1. With a fork, blend together the eggs, Parmesan, salt & pepper in a bowl.
  2. On the stove top, heat a cast iron skillet over medium heat. Add butter and melt.
  3. Add the mushrooms, bacon and spinach. Sautée 2-3 minutes.
  4. Add the avocados and egg mixture into the skillet.
  5. Cook until the egg mixture has set on the bottom and begins to set up on top, about 4-5 minutes.
  6. Broil in the oven for an additional 4-5 minutes until fluffy and lightly brown.
