As much as I love cooking, sometimes it’s just too hard to get out of bed in the morning to make a grand breakfast for the family. Sure pancakes, eggs, bacon, and the whole spread is a great way to start the day, but sometimes mama just wants some extra beauty sleep, you know?

So when I’m having one of those my-bed-is-too-comfy-to-move kind of mornings, I turn to this new recipe – breakfast cupcakes!

Cupcakes for breakfast? Yes!

Am I crazy? Maybe!

But I can guarantee you these cupcakes will be the most nutritional and breakfasty cupcakes you’ll ever lay your eyes on.

These things are absolutely amazing. The ham “cups” in this recipe get so nice and crispy, and the eggs have a nice crispy home to get all fluffy and delicious. The best part of these little cups of wonder is that it takes almost no prep work. Just throw the ham in, crack some eggs, and go.

The only thing I enjoy more than this recipe’s simplicity is it’s adaptability. The salt, pepper, and fresh parsley are my staple ingredients to add to the breakfast, but you easily experiment with other ingredients to create your wildest of breakfast creations. Green onions, chorizo, bacon… you name it. Just throw some in there!

Ham and Egg Breakfast Cupcakes

These ham and egg breakfast cupcakes and delicious and super simple to make. Make it your own by adding spices, green onions, parsley... you name it!


  • 12 eggs
  • 12 circular slices of ham
  • salt and pepper
  • fresh chopped parsley (optional)


  1. Preheat your oven to 375°F.
  2. Spray muffin or cupcake tin with cooking spray.
  3. Place a ham slice into each muffin cup, making a pocket in which to place the eggs.
  4. Crack an egg into each ham cup. Sprinkle with salt and pepper.
  5. Cook for 15-20 minutes, depending on how you like your eggs!
  6. Top with chopped parsley (or whatever else you like - green onions work well too!).
